Sirloin Smothered in Chimichurri

Steak & Chimichurri, a match made in heaven!!
But what is Chimichurri? This herb-based sauce made with fresh parsley, cilantro, garlic, olive oil, and spices is a sure fire winner.

Chimichurri Sauce
  • 1/2 cup fresh italian parsley
  • 1/2 cup fresh cilantro
  • 3/4  cup olive oil
  • 1/4 cup red wine vinegar
  • 2 garlic cloves, peeled
  • 2 T oregano fresh
  • chili peppers to taste
  • salt and pepper to taste

Steak
  • Top Sirloin
  • Salt and pepper to taste
  • Pat of European butter 
  • olive oil

Instructions
  • Heat olive oil in a large skillet set to med high.
  • Season steak with salt and pepper liberally.
  • Place the sirloin seasoning side down and sear undisturbed for 2 to 4 minutes.
  • Flip the sirloins and sear for an additional 2 minutes. This will give your steaks a nice seared edge and a mid rare finish.
