Sometimes, you just don't have the time or energy to cook. This keto friendly/low carb "pasta" dish will be perfect to satisfy those Italian food cravings. Made with basil pesto sauce, the flavor of this dish is light and fresh...just like your garden in Spring.

How to Make Zucchini Pasta AKA Zoodles

No matter if you have just a veggie peeler or a fancy spiralizer, you can enjoy this recipe! My favorite way is to cut the zucchini is into ribbons. Simply peel your zucchini into thin, wide ribbons. If you would like a smaller, more pasta like size, slice the ribbons down with a knife.​

No Cook Zucchini Pasta Recipe

Ingredients
  • 4 medium zucchini
  • ½ cup pesto sauce
  • 1 cup chopped cherry tomatoes
  • salt & pepper to taste
  • shredded Italian cheeses of choice
  • parsley or other desired herbs

​Instructions:
​
1.) Ribbon zucchini with veggie peeler or into zoodles with spiralizer
2.) Mix in pesto sauce and chopped cherry tomatoes
3.) Season with salt and pepper to taste
4.) Garnish with Italian cheese & chopped herbs
