Gingerbread is quintessentially Christmas! Warm spices, adorable presentation and festive colors. But let's spin our love of those tiny gingerbread men into something more rich. Enter the Mini Gingerbread Cheesecake!!
Our mini cheesecakes have three great components that make it especially delicious – the puff pastry "crust", a super rich and creamy cheesecake filling and of course an endearing Gingerbreadman topping. So fun!
To get started with the crust, simply bake off premade puff pastry cups and allow them to cool. Next our filling is easily whipped together with just a few simple ingredients!
14 oz softened cream cheese
1 cup powdered sugar
2T extract (vanilla or gingerbread)
2T pure maple
3/4 teaspoon gingerbread spice
Mix together until combined and add to piping bag..
Next, fill your cooled puff pastry cups with the cheesecake filling. Top with premade gingerbread men and a sprinkling of cinnamon to garnish.
