Reverse Seared Ribeye

What is the reverse sear method?

Cooking steak traditionally involves searing it over high heat, then finishing in an oven until desired doneness. The reverse sear method flips the order of cooking! First you cook the meat on a very low heat in the oven before searing the outside on a super hot surface allowing you to have a perfect mid rare steak each time.

INGREDIENTS:

3 inch thick ribeye steaks
Salt and pepper to taste
4 smashed garlic cloves
2 or 3 T butter
oil for searing

DIRECTIONS
  • Preheat oven to 200 degrees
  • Place well seasoned steaks on a rack over a baking tray and cook around 60 minutes.
  • Remove when at temp and rest for 10 minutes under foil
  • Preheat a skillet until smoking hot
  • Sear steaks for 2 to 3 minutes per side
  • Add smashed garlic cloves and a few tablespoons of butter
  • Serve immediately

Seared Ahi Tuna Steaks

​Sesame sprinkled ahi tuna with sesame soy sauce is a healthy and very simple dish to make! Pickled cucumbers add a sweet and tangy crunch with each bite.

Ingredients:
10 ounces ahi tuna , about 1 inch thick
2 tablespoons oil

Directions:
In a medium frying pan over medium-high heat, warm the oil until just smoking.
Frying two portions at a time, arrange the tuna steaks in the pan and cook about 1 minute.
Turn the tuna over and cook for 1 minute for rare.
Serve with pickled cucumbers and sesame soy sauce.
